Staffing adds the published hourlys — roughly $55/hr per server at one per 10–12 guests, $75/hr sous chefs, four-hour floors per event. Then the fee stack: 20% service on its own line, Hawaiʻi GET up to 4.7120% on its own line. Every number traceable to the published card.
The alternative, priced
Run the same week inside resort F&B programs: minimums of $7,500–$15,000 per event across four events is $30,000–$60,000 before menus, plus service at 23–25%. On our $31,500 example, the five-point service gap alone — 20% versus 25% — is worth $1,575.
