The rehearsal dinner is the week’s most personal meal: twelve to forty of the closest people, plated properly, in a villa instead of a restaurant’s back room. From $150 a guest plus staffing at the published hourlys.
The format
Plated two-to-three courses suits the rehearsal’s shape — there are toasts, and plated service bends around speeches without losing a dish. Family-style works when the families already know each other. The menu call happens with whoever is hosting.
Why a villa beats a restaurant buyout
No room fee, no per-person beverage minimums, no 10pm curfew, and no other parties’ noise. The villa’s table, the family’s bottles — client-supplied, always — and a crew that leaves the kitchen cleaner than the venue’s would.
Staffing the night
Forty plated guests typically run three servers at $55/hr and a sous at $75/hr on the four-hour floor. The math is written into the quote — one server per 10–12 guests is the working rule.
Inside the week
As part of the wedding-week contract, the rehearsal reuses the week’s dietary map and shopping rhythm. Standalone, it is its own written quote — the same discipline either way.
