Dinners: inside the band
For signature, premium, and event dinners, groceries are inside the published per-guest band — $150–$250 a guest buys the food and the service. No separate grocery line appears; the band was built to contain it.
Stay Chef and provisioning: at cost
Multi-day service bills groceries at cost with receipts. The reason is honesty at scale: a week of groceries for eight varies by thousands depending on menus, and a bundled “estimate” would either overcharge you or force corner-cutting. Receipts end the argument before it starts.
The Maui reality
Hawaiʻi groceries run roughly 31–53% above mainland prices — that is freight, not markup. We buy from Maui farmers, fishers, and ranchers first, which keeps more of the food dollar on the island and often buys better for less.
