Hiring well takes one good inquiry and four checks. This guide covers both, including the checks we would run on us.
The four checks

- Honest kitchen requirements — a chef who cooks anywhere cooks nowhere well
The first inquiry
Send dates, headcount, the villa or area, dietary flags, and a photo of the kitchen if you have one. That single message is enough for a real written quote — ours or anyone’s.
Red flags
“Call for pricing” with nothing published; service charges that appear at invoice; reviews that cannot be verified; and anyone who says yes to a hotel room with a coffee maker. The market’s strongest operators publish something — the ones who publish nothing are asking you to negotiate blind.
Questions, answered
Two to four weeks is comfortable; December through April and wedding-month Saturdays go earlier. The written quote plus deposit is what holds a date.
