The resort’s private dining program, versus your own kitchen.
Wailea’s resorts run polished private-dining programs — cabanas, lawn dinners, the works. They also run F&B minimums, 23–25% service charges, and set menus. Here is the honest comparison.
What the resort sells
A venue, a view, and a production: the cabana, the torch-adjacent ambience, the banquet team. For some evenings that is exactly right. The price structure is the venue’s: minimums that start where a villa dinner’s whole bill ends.
The structural differences
- F&B minimums: $7,500–$15,000 per event at resort scale
- Service charges: 23–25% versus our 20%, theirs often bundled
- Menus: banquet-set versus written around your table
- The room: theirs, shared with the resort — versus yours entirely
When each is right
The resort wins when the venue IS the evening — the cliff lawn, the production. The villa wins when the people are the evening: the reunion, the wedding-week meals, the week where privacy is the luxury you actually flew here for.
Questions, answered
On food and service, yes — with rentals and staffing coordinated into the quote. On venue spectacle, no: the resort owns the cliff. Choose what the evening is actually about.
Resort banquet food is built for volume; private-chef service cooks for your table alone, that evening, from that morning’s market run. The comparison flatters the villa.
