The courses
Courses shift with the market — the catch is whatever the boats brought, the greens are Upcountry’s morning. The structure holds; the ingredients stay honest.
- First — taro-and-ʻulu composition with Kula greens; the canoe crops introduced properly
- Main — macadamia-crusted island catch, coconut-vegetable accompaniment
- Finish — lilikoi dessert, the Maui signature ending
Dietary flags
The menu adapts to all eleven flags; gluten-free and dairy-free versions lose nothing, and the plant-based version — taro, ʻulu, breadfruit at the center — is a destination in itself.
Price and booking
Plated inside the $150–$250 a guest signature band, groceries included, with 20% service and GET on their own lines. Premium additions — lobster, a chef’s-table course — quoted in writing.
