The menu reality
Most Maui menus convert to gluten-free without a single visible compromise — the crust is macadamia, the starch is taro, the thickener was never flour. Where a dish needs redesign, it gets redesigned, not dusted with a substitute.
Mixed tables
One celiac guest at a table of twelve is routine: their courses run in parallel, plated and flagged, timed with the table. Nobody eats a visibly lesser meal.
