Every staffed event on Maui runs on two published hourlys: servers at $55 an hour, sous chefs at $75, with a four-hour floor. The staffing plan is written into the quote — never discovered on the invoice.
How we scale the crew
The working rule is one server per ten to twelve guests for plated service, looser for family-style, tighter for passed pūpū programs. Sous chefs join when the menu or the kitchen demands it. The math is shown in the quote, line by line.
The roles
- Servers — $55/hr, four-hour floor: plating support, table service, reset
- Sous chefs — $75/hr, four-hour floor: the second pair of professional hands in the kitchen
- Bartenders — via licensed referral or client arrangement; see the alcohol posture
- Butlers and estate-service roles — quoted per event for the estates that run them
What staffing is not
Staffing lines are labor, not a service-charge hiding place. The 20% service charge is always its own line, GET up to 4.7120% is another, and hourlys are a third. Three lines, three meanings, zero blending.
Questions, answered
Plated, plan on four to five; family-style, three to four. The quote shows the exact plan and the hourly math before you commit.
Upcountry carries the published travel line from $75. Hāna is mention-only: two-plus hours each way means we quote it reluctantly and honestly, or decline.
