A DLNR beach permit is a beautiful ceremony license and a terrible reception plan: roughly twenty people, no arches, no chairs, two hours. Maui’s answer is the estate reception — and estates need a crew that can actually run them.
Why receptions migrate to estates
The state’s Wiki permit system caps professional beach ceremonies at roughly 20–25 people including vendors, bans structures, and holds events to two hours. Couples keep the toes-in-sand ceremony at Makena Cove or Kapalua Bay, then move everyone to an estate lawn or villa lānai where dinner can actually happen.
That migration is the core of Maui’s wedding economy: Kukahiko Estate, Olowalu Plantation House, Haiku Mill, and the Wailea and Kapalua villa stock all assume an outside culinary team.
What we run on an estate
- Plated two-to-three-course receptions, premium buffets, family-style feasts, pūpū and grazing formats
- Servers at $55/hr and sous chefs at $75/hr, four-hour floor, scaled one server per 10–12 guests
- Rentals coordination — tables, linens, glassware — quoted with the food, not after it
- The packaged bar cart from $800/4hr; alcohol is client-supplied or via licensed referral

Kukahiko Estate’s kitchen was purpose-built for outside caterers — its operators designed it so caterers love working there. Haiku Mill runs a preferred-vendor list with a $650 outside-vendor fee, which we tell you about before you sign anything, not after. We work with your planner on the list.
The service-charge comparison
Resort food-and-beverage programs commonly carry $7,500–$15,000 minimums per event plus 23–25% service charges. Our service charge is 20%, always on its own line, and there is no F&B minimum — the written quote is the confirmed total.

Staffed events run 10–75 guests. Over 75 is a written exception — we assess kitchen, power, and staffing honestly and quote it, rather than implying a capacity we cannot crew.
